Quinoa with Corn and Peas


Here comes another delicious and nutritious summer salad that I can’t stop eating. Quinoa is super nutritious hearty grain that cooks quickly so it is a perfect base for summer salads that keep you out of the kitchen and still fuels you up for those fun filled days. This super simple salad is great as a stand alone side or can quickly be adapted in many ways to make it a full meal. One of my favorite ways to take it up a notch is to add black beans or left over grilled chicken and feta cheese for an extra protein punch. It is simply delicious either way. 


It refrigerates well which makes it great for weekend warrior cooks who pack their fridges full on Sunday evening in preparation for the work week. I started little B on quinoa when he was about 7 months old because I wasn't big on giving him a ton of meat. With 8 grams of protein and 5 grams of fiber per serving it seemed like a no brainer to add this whole grain into his diet. I really like this dish because it is super baby/toddler friendly while still having enough flavor and color to entice a more sophisticated palate.
 
1 C quinoa
1.5 C H2O
1 Green Onion
½ Lime, zested and juiced
2 tbs EVOO
S&P
2 ears of corn, cornels cut off
½ C Frozen peas
