Caramelized Onion, Peach and Ricotta Cheese Flat Bread



We are reaching the end of the peach season but there are still a bunch of beautiful stone fruits available in the markets all over town so I wanted to take some time to highlight them in this awesome flat bread. Since I was taking this one to a cocktail event I folded the crust over the top to ensure it would be easy to eat while standing and mingling. The sweet creamy flavor was perfect for a night out with the ladies and since it got rave reviews and I can’t wait to make it again for my next big event.

1 pizza dough, I used Trader Joe’s dough
½ onion
2 peaches
1 tbs butter
1 tbs EVOO
1 C ricotta cheese
1 tbs fresh chives
S&P

Cook onions in butter and oil until caramelized, stirring throughout the process to ensure they are evenly cooked. Thinly slice the peaches and add to the onion mixture. Season with salt and pepper and then remove from the heat. Mix the ricotta and chives together and season with salt and pepper. Spread the cheese mixture over half of the pizza dough cover with the peach and onion mixture and then fold the crust over and pinch it together around the edges to keep it closed. Brush the top side of the dough with EVOO and sprinkle with salt and bake based on the instructions on the dough packaging.
