Roasted Acorn Squash with Rosemary
Another winter highlight dish is here! Acorn squash is a super healthy and totally delish. It tends not to be as sweet as its more regularly used cousin the butternut but is one of the ones I grew up on and so therefore have a special place in my heart for. This super easy and tasty recipe brings another super nutritious winter side to the table.

1 acorn squash, peeled and chunked into bite size pieces
2 tbs EVOO
1 tbs chopped fresh rosemary
Salt and Pepper

Toss all the ingredients in a bowl and place on a baking sheet. Bake at 400 for an hour.
